The Ultimate Superfood Muffin

Ingredients:

3/4 cup Oat Flour

3/4 cup Whole Wheat flour

1 tsp baking soda

1 tsp salt

1/2 cup sugar

3 large bananas

1/2 cup cup blueberry greek yogurt

4 tbsp coconut oil

1/4 vanilla

1/2 grated carrots

Directions:

Preheat the oven to 350 degrees. Mix the oat flour, wheat flour, baking soda, salt and sugar in a medium bowl and set aside. In a seperate bowl, mash the bananas. Stir in the coconut oil, vanilla and greek yogurt. Add the banana mixture to the dry ingredients and mix until combined. Fold in the grated carrots and mix until incorporated. Line a cupcake pan with 12 liners and fill them 2/3 of the way. Bake for 45 minutes until golden.
